Green Kunming Organic Sausage Marinara

  • splash of olive oil
  • diced clove of organic garlic
  • one large sliced organic green pepper
  • one diced organic chili pepper
  • splash of cooking liquor
  • 2 kilos of lightly boiled and peeled organic tomatoes
  • small bunch of organic leeks
  • sea or rock salt
  • course black pepper
  • 2 dashes of dried basil and dried oregano
  • 400 grams of Green Kunming organic sausages
  • Lightly sauté the garlic, green pepper and chili until lightly browned.
  • Turn up the heat and caramelize the mix with a splash of cooking liquor (brandy works fine, but I happened to have some grappa in the house and it worked great.)
  • Once caramelized, add a cup of water and put in the peeled tomatoes whole.
  • Turn down the temperature and simmer covered for 15 minutes.
  • Use a large spoon or fork to mash the tomatoes into a thick sauce.
  • Add the leeks and the salt and pepper to taste and simmer covered for another 30 minutes.
  • Stir frequently and add water if needed.
  • Mix in the oregano and basil and place the sausages on top of the sauce.
  • Cover and simmer for another 15-20 minutes.
  • Serve the marinara with your favorite pasta and either serve the sausages whole or cut them into smaller portions into the sauce.

Interview: Jian Haiyun
