Spicy Tomato and Lentil Soup

  • 1/2 kilo of organic rice
  • 1/2 kilo of lentils
  • 2 tablespoons of grape-seed or peanut oil
  • Splash of cooking wine
  • 3 heads of diced organic garlic
  • 8 chopped large organic chilies
  • 1 sliced organic cabbage
  • 1 sliced organic purple cabbage
  • 1 kilo of organic tomatoes
  • rock or sea salt
  • black pepper
  • organic feta
  • Soak the lentils for at least 2 hours before using them.
  • Cook the rice.
  • Sautee the garlic and chilies in the oil until lightly browned, then caramelize with a splash of cooking wine. Lightly salt the mixture.
  • Add the cabbages and submerge in water. Bring to a boil and place the whole tomatoes in the mixture.
  • Simmer for about 20 minutes and remove the whole tomatoes. Set aside to cool.
  • After about 10 minutes, either chop the tomatoes or squeeze them back into the soup with your hands.
  • Add the soaked lentils and simmer for about 2 hours.
  • Make sure to stir the soup from the bottom and add water if needed.
  • Salt and pepper to taste.
  • For serving, place rice in the bottom of the bowl and pour the soup over the rice. Add a sprinkling of feta on top.
